PICUAL AND HOJIBLANCA VARIETIES: PRODUCTION OF THE “OLEUM MATURUM”

Mueloliva Clásica is produced from two varieties of olives, Picual and Hojiblanca.

The olive gathering begins in the middle of December, when the fruit is starting to change colour and there is a mixture of black and green olives. This is how, every year, early December sees the beginning of a task which will occupy thousands of men and women in Andalusia through to the Spring.

Cold-pressed and with great care taken over each detail of the process, we produce an extra virgin olive oil from mature olives (Oleum Maturum) with a light fruitiness, sweet, not bitter and with an almost imperceptible touch of spiciness.

Mueloliva Clásica is a staple in the kitchen, with daily consumption being highly recommended. It can be used both for salads and gazpachos as well as pasta, soup, meat, stew and even fried food. It is perfect for those dishes where you want to enhance the flavour.
