Almazara de Muela is produced using three varieties of olive: Picual Hojiblanca and Picuda which are harvested in the Subbética region of Córdoba during the month of December. The lightness and fruitiness of the ripe olive makes this a sweet oil, slightly bitter and with an almost imperceptible spiciness, making it particularly suitable for general use in cooking, for stews and roast meat, casseroles, rice dishes, stir fries, and it is also ideal for any fried food.
